We rescued some Pineapple Sour from our 2019 batch that would have otherwise been destroyed. It was barrel-aged and blended with a fresh batch. The result was a bright, tropical sour complexity paired with subtle oak characters and notes of Brettanomyces. But we didn’t stop there...to balance the complexity we tossed a healthy dose of cranberry juice into the fermenter, on top of a tonne of rescued pineapple. This annual sour has certainly earned a place in our hearts.
